Perfect Banana Raisin Bread recipe. Very easy to make, super moist and taste really good! This recipe is an all time favorite in our household and it always disappears fast!
Ingredients:
2 large eggs, at room temperature 1 teaspoon pure vanilla extract 3/4 cup raisins 3 large ripe bananas 1/2 cup + 2 tablespoons (10 tbsp)unsalted butter, melted and cooled 1 ½ cups all purpose flour 1/2 cup + 2 tablespoons granulated white sugar 1 teaspoon baking soda 1/2 teaspoon ground cinnamon
Instructions:
Preheat your oven to 350 degrees F (180 degrees C) Butter or Spray a 9 inch loaf pan and lined with parchment paper.
In a small bowl, mix together 2 large eggs, 1 teaspoon pure vanilla extract and 3/4 cup raisins. Cover and let it stand for 1 hour.
In a large bowl, whisk together 1 ½ all purpose flour, 1/2 cup + 2 tablespoons granulated white sugar, 1 teaspoon baking soda, 1/2 teaspoon ground cinnamon and 1/4 teaspoon salt. Set aside.
In another bowl, mash 3 large ripe bananas, 1/2 cup + 2 tablespoons unsalted melted butter. Stir in the egg and raisins mixture.
With a rubber spatula, lightly fold the wet ingredients into the flour mixture and mix just until combined.
Transfer batter into prepared pan. Smooth the top with an offset spatula or the back of the spoon.
Bake at 350 degrees F (180 degrees C) for about 60-70 minutes until bread is golden brown and a toothpick inserted in the center comes out clean. (If you find the banana bread browning too much as it bakes, cover with a piece of lightly buttered foil.) Remove from the oven. Place on a wire rack to cool.
