This is the perfect chocolate chip cookie! Crispy on the outside and chewy on the inside, loaded up with chocolate chips, easy to make, and amazingly delicious!
Ingredients:
2 cups (260 grams) all purpose flour 1 cup (200 grams)granulated white sugar 1/2 (100 grams) cup light brown sugar 2 cups (175 grams) old-fashioned rolled oatmeal I cup (227 grams) unsalted butter, at room temperature 1 cup (150 grams) raisins, currants, dried cranberries or cherries 1 (4 grams) teaspoon pure vanilla extract 2 teaspoons (8 grams) baking soda 1 teaspoon (2 grams)cinnamon 3 large (150 grams) eggs 1/2 teaspoon (2 grams) salt 1 cup (120 grams) toasted chopped pecans or walnuts (toast the nuts for 7 to 10 minutes) or until lightly brown
Instructions:
First combine 3 large (150 grams) of eggs, 1 cup (150 grams) of raisins and 1 (4 grams) teaspoon of pure vanilla extract, and let stand for one hour. Preheat your oven to 350 degrees F (180 degrees C) and line baking sheets with parchment paper.
In a bowl mix together 2 cups (260 grams) all purpose flour, 1/2 teaspoon (2 grams) salt, 1 teaspoon (2 grams) cinnamon and 2 teaspoons (8 grams) baking soda.
In the bowl of your electric stand mixer fitted with the paddle attachment (or with a hand mixer), beat I cup (227 grams) unsalted of butter until smooth. Add 1 cup (200 grams) of granulated white sugar, 1/2 (100 grams) cup light brown sugar and beat until creamy and smooth (about 1-2 minutes).
Then stir in the flour mixture and combine , add in the egg-raisin mixture, 2 cups (175 grams) of old-fashioned rolled oatmeal, and 1 cup (120 grams) of toasted chopped nuts ( I used toasted chopped pecans.)
Scoop them evenly or roll 2 tablespoons (depending on how large you like your cookies) into balls and place them evenly spaced on your prepared cookie sheets. Then lightly wet your hand and flatten the cookies slightly with your fingers or can use gloves (powder free).
Bake at 350 degrees for about 10 to 12 minutes or until golden brown.
Remove from oven and place the baking sheet on a wire rack. Let the cookies cool for a few minutes on the baking sheet so they firm up, before transferring them to a wire rack to finish cooling
