Anyone can make these simple steamed chocolate cupcakes that are moist with bits of chocolate inside. These cupcakes are delicious even without frosting. Your kids will love it!
Ingredients:
1 ½ cup (80 grams) all-purpose flour 5 tablespoons (38 grams) unsweetened cocoa powder 3 tsp (12 grams) baking powder 3 large egg, at room temperature 1/2 cup (98 grams) granulated white sugar 9 tablespoons (135 ml) milk 6 tablespoons ( 90 ml) vegetable or canola oil 1/2 cup (105 grams) semi sweet chocolate chips
Instructions:
Cover the lid of your steamer with a kitchen towel or cheesecloth to prevent condensation. Fill steamer with water and slowly bring water to boil
Prepare 12 silicon muffin cups or 12 6-Oz ramekins with cupcake liners.
In a bowl, sift together 1 1/2 cups of all-purpose flour, 5 tablespoons of unsweetened cocoa powder and 3 teaspoons of baking powder. Whisk to combine.
In a another bowl, whisk 3 large of eggs and 1/2 cup of granulated white sugar, whisk until sugar dissolved. Add in 9 tablespoons of milk and 6 tablespoons of vegetable oil. Whisk together.
Make a well in the center of flour mixture. Pour the egg mixture into the flour mixture and combine.
Stir in 1/2 cup of semi sweet chocolate chips and mix until just combined. Do not over mix!
Divide the batter into the cupcake liners.
Steam on the lowest heat for about 12 minutes. They’re done when a toothpick inserted comes out clean.
Remove from the steamer and let them cool.
These cupcakes are delicious even without a frosting or you can also top them with your favorite chocolate frosting. Serve and enjoy!
