2 cups (260 grams) all purpose flour 2 cups (260 grams) bread flour 1 tsp (4 grams) baking powder 1/2 tsp salt 1 large egg, at room temperature 2 tbsp (30 ml) vegetable oil or canola oil 6 tbsp (84 grams) melted unsalted butter Cheese for filling Bread Crumbs
Instructions:
In a bowl combine, the 1 cup warm fresh milk, sugar, yeast and stir until they are fully dissolved. Cover and let it proof for 5-10 minutes.
In a small bowl or cup mix together 1/4 cup of milk and ube extract.
In another mixing bowl, combine the dry ingredients starting with the flours then the salt and baking powder. Whisk well.
Add the egg, butter, cooking oil, yeast mixture and ube mixture in the mixing bowl with the dry ingredients then mix until a dough is formed. Use your hands to mix the ingredients.
In a flat surface, knead the dough until the texture becomes fine (add more flour if it’s too sticky) then mold the dough until shape becomes round, for faster and easier kneading, you may use a Stand Mixer with dough hook.
Transfer dough in a grease bowl. Cover until the dough double it’s size.
Uncover the dough and punch the dough to air out. Transfer dough in a clean surface and divide into 4 equal parts.
Roll each part into a log and cut into 4 equal pieces. Flatten each piece, put cheese in the center. Fold and pinch to seal the edges. Roll in your hands to make a round shape .
Roll over the breadcrumbs. Place in a tray lined with parchment paper (makes sure to provide gaps between dough as this will rise later.)
Cover the dough and let it rise for about 25-30 minutes.
Preheat your oven at 375 F degrees (190C) and bake for about 15 minutes.
